And if I can give you one truly good insider tip: visit at least two caves. You’ll discover two stories, two atmospheres, two aging methods… and twice the pleasure.
The first time, I promised myself I’d only visit one.

Roquefort: a cheese born in the heart of Aveyron… and the first French cheese to earn a protected designation of origin!
We sometimes forget that before becoming a gastronomic icon, Roquefort was born right here, in the heart of Aveyron, deep beneath the Combalou mountain.
It was this exceptional terroir that led Roquefort to become the very first French cheese to receive an official designation of origin in 1925. And this famous AOP has just celebrated its 100th anniversary in grand style — a true source of local pride!
Of course, everyone loves to tell the legendary story of the absent-minded shepherd who forgot his bread and cheese in a cave, only to return days later to discover what would become the very first Roquefort. I’ll admit, I’m not sure if the story is true — but it certainly puts everyone in a good mood… especially when you see what today’s master affineurs have made of it.
